With the holidays coming I thought I would start posting my Halloween/Thanksgiving/Christmas recipes. I love this SO much. I make this for Thanksgiving morning, and I serve it with some cream cheese that I just add sugar and pumpkin pie spice too. Its really good. My mother-n-law loves it and you know its good when the mother-n-law loves it.
Pumpkin Bread
1 1/2 c. flour
1/2 tsp. salt
1 c. sugar
1 tsp. baking soda
1 c. pumpkin puree
1/2 c. vegetable oil
2 eggs, beaten
1/4 c. water
1/4 tsp. nutmeg
1 tsp. cinnamon
1/2 c. chopped nuts (optional)
Preheat your oven to 350. Sift together the flour, salt, sugar, & baking soda. In a separate bowl, combine the pumpkin, oil, eggs, water, & spices. Pour into the bowl w/ dry ingredients & mix just until all are combined - don't stir too much! Stir in the nuts, if you're using them (I like it better w/o the nuts). Pour into a well-buttered 9x5x3-in. loaf pan; bake 50-60 minutes until done in the middle. Remove from pan, cool on a rack.
Keep wrapped in the refrigerator.

Black Forest Cake- Guest Recipe
My name is Kel and I'm the author of Between the Lines. Here is a recipe for a yummy Black Forest Cake that my four year old daughter and I made for my dad's birthday. It was a huge hit. Every single crumb vanished within ten minutes. I hope your family enjoys it as much as mine did!
Ingredients
1 pkg. (2-layer size) devil's food cake mix
1 cup boiling water
1 pkg. (4-serving size) Cherry Flavor Gelatin
1/4 cup cold water
2/3 cup Sour Cream
2/3 cup powdered sugar
1 tub (8 oz.) Whipped Topping, thawed
1/3 cup drained maraschino cherries, divided
1 square BAKER'S Semi-Sweet Chocolate, melted
Directions
- Prepare and bake cake mix in two 8- or 9-inch round layers as directed on package. Run knife or metal spatula around sides of pans to loosen cakes. Cool in pans 15 min.
- Stir boiling water into dry gelatin mix at least 2 min. until completely dissolved. Add cold water. Pierce cakes with large fork at 1/2-inch intervals. Carefully pour half of the gelatin mixture over each cake layer. Refrigerate at least 3 hours.
- Mix sour cream and powdered sugar; gently stir in whipped topping. Dip one cake pan in warm water 10 sec.; unmold onto serving plate. Spread with 1 cup of the whipped topping mixture. Reserve a few cherries for garnish. Chop remaining cherries; sprinkle over frosted layer.
- Unmold second cake layer; carefully place on cake layer on plate. Frost top and side of cake with remaining whipped topping mixture.
- Drizzle with melted chocolate.
Garnish with reserved cherries. Store in refrigerator.

Watermelon Water
*Watermelon Water*
In honor of my new theme I thought I would make some watermelon water and post the recipe. Ingredients:
2 pounds seedless watermelon chunks
2 cups water (you could also use sparkling water if you want some bubbles)2 limes, juiced
2 tablespoons sugar -- or to tasteSalt
Directions:
Put half the watermelon in a blender with half the water. Add half the lime juice, half the sugar and a pinch of salt. Blend until smooth, strain using a strainer, pour into a large pitcher. Repeat with remaining ingredients. Taste for salt and sugar, adding more a pinch at a time to bring out the watermelon flavor. Chill at least 1 hour before serving.

Grilled Potato Salad
*Grilled Potato Salad*
Ingredients:6 medium potatoes (skin on), baked, cooled, sliced in half and grilled
4 tablespoons chopped olives (whatever kind you like)
4 ribs celery, thinly sliced
3 green onions, thinly sliced
2 tablespoons fresh dill, minced
Dressing:
1/4 cup olive oil
2 tablespoon balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon crushed garlic
Grinding of fresh pepper
When potatoes are cool after being grilled, slice each half horizontally in 3 strips, and then chop into chunks. Add chopped potatoes to a large mixing bowl. Add olives, celery, onion and dill and mix well.
In a separate small bowl, whisk oil, vinegar, mustard and garlic until well mixed and slightly thick (the mustard will emulsify the dressing). Pour over potato salad and mix well, Grind some fresh pepper over top, mix again and taste. Adjust seasoning by adding more vinegar, oil, salt or whatever you think it needs (a squeeze of fresh lemon juice?), to your taste.
Place in a nice serving bowl.

Nemo Sticks
Kelly from Crouching Mother, Hidden Toddler Submitted this to me. Thank you, I think this is such a cute idea.
Ingredients:
1 can salmon/tuna, drained
1 tbsp mayo mixed with 1 tbsp ketchup
2 green onions, sliced (green part only)
vegetable: such as canned corn or carrot - amount doesn't matter
Leftover mashed potato/sweet potato or fresh bread crumbs - approximately 1 cup
Salt and pepper
Flour, whisked egg wash and dried breadcrumbs for coating.
Cooked peas for the eyes, optional
Instructions:
Mix all ingredients together in a bowl. Season to taste with salt and pepper.Using your hands; form the mixture into fish-shaped patties. Dip the fish cakes into the flour, then the egg wash allowing the excess to
drip off. Next, coat them evenly in the dried breadcrumbs. Make a small indentation for the eye.
Heat the oil in a large frying pan over medium-high heat and sauté for about 5 minutes, turning halfway through until golden on both sides.
Placed the cooked peas on the fish-cakes for the eyes.
