Ingredients:
1 3/4 cup all-purpose flour
2 teaspoons baking powder
1/4 cup sugar
1 egg
3/4 cup whole milk
1/4 cup vegetable oil
3/4 cup chocolate chips
1 teaspoon finely grated orange peel
Directions:
In a mixing bowl, combine dry ingredients. In a separate bowl, combine egg, milk, and oil. Add all at once to dry mixture and stir. Do not beat muffin mixture - it should be a little lumpy. Fold in chocolate chips. Add grated orange peel for a little zest.
Grease muffin tray and fill with mixture to about 2/3 full. Bake in a 400F degree oven for about 20 minutes until golden.

ReplyDeleteOh I love that you added a bit of the orange zest. When I lived abroad, there was little shop that had chocolate croissants with a hint of orange - it was divine! This may have that same "feel" to it, know what I mean?
