Zippy Ziti
Ingredients:
1 1/2 cups ziti
3/4 cup milk
3 Tablespoons butter
1 1/2 cups grated sharp cheddar cheese
Directions:
1. Cook the noodles according to the package directions, drain.
2. Add the rest of the ingredients to the noodles, and put into a two-quart casserole dish.
3. Bake at 350 degrees F for 35 minutes.

Tomato Basil Pizza
*Premade pizza dough. * I bought my dough at Fresh and Easy for $1.49
*1 1/2-2 cups Mozzarella cheese *I used shredded/package
*3-4 Roma Tomatoes, sliced
* Basil leaves
*2 cloves of garlic, mincedHow To: (preheat oven to 450degrees)
1. Roll out pizza dough on a flowered surface to a 12inch round
2. Transfer to oiled/Pam sprayed cookie sheet
3. Sprinkle minced garlic all over the dough
4. Sprinkle cheese
5. Add Tomatoes
6. Add Basil, I ripped them apart and placed them on top of the tomatoes.
7. Put in oven for 8-10 minture or until crust is golden.
ENJOY!! Kids can help with rolling out the dough or placing the toppings on. Make it a family night!

Upside Down Pizza
*Upside Down Pizza*
Ingredients1-1/2 pounds lean ground beef
1 15-ounce can Italian-style tomato sauce
1-1/2 cups shredded mozzarella cheese (6 ounces)
1 10-ounce package refrigerated biscuits (10 biscuits)
Directions
1. Preheat oven to 400 degrees F. In a large skillet cook beef until no longer pink, stirring frequently. Drain off fat. Stir in tomato sauce; heat through. Transfer mixture to a 2-quart rectangular baking dish. Sprinkle mixture with cheese.
2. Flatten each biscuit with your hands; arrange the biscuits on top of the cheese. Bake in the preheated oven about 15 minutes or until biscuits are golden. Makes 5 servings.

Taco Salad Recipe
*Taco Salad Recipe*
Ingredients:
1-1/2 lbs. lean ground beef (90% or 93%)
2 Tbsp. chili powder
1 cup salsa (which ever you like or homemade)
Tortilla chips
1-1/2 cups shredded Mexican cheese blend (cheddar and Monterey Jack)
Preparation:
1. Brown ground beef and chili powder in a large skillet.
2. Remove from heat and drain. Stir in salsa.
3. Arrange tortilla chips in a large salad bowl. Top with ground beef mixture and cheese. Top with your favorite taco toppings.
Enjoy.
You could make this heatlhy with ground chicken/turkey

Baked Parmesan Garlic Chicken
*Baked Parmesan Garlic Chicken*
Ingredients:
1/2 cup grated Parmesan cheese
2 cups of plain bread crumbs
1/2 tsp. garlic powder
2 eggs
salt and pepper
6 boneless skinless chicken breast halves
Directions:
1. Preheat oven to 400°F.
2. Mix cheese, bread crumbs and garlic powder.
3. beat up eggs in a bowl.
4. Dip chicken breasts in egg mixture; coat with breading mixture. Place in shallow baking dish.
5. Bake 20 to 25 min. or until chicken is no longer pink in the center.
I have also tried applesauce instead of egg. Just dip the chicken into applesauce before you coat with the breading mixture.

Kid sized pizza's.
These are pizza's that can be make in the matter of minutes. Plus they are really simple to make and they are full of flavor.
What you need:
1 standard-sized bagel cut in half (use what ever you like, plain white or wheat)
Marinara sauce (homemade or from a jar)
Shredded mozzarella cheese
Toppings like diced green pepper, chopped onion, or chopped tomato (whatever you like)
Directions:
1. Preheat the oven to 325° F.
2. Spread marinara sauce on each bagel half.
3. Sprinkle the shredded cheese on each half.
4. Add your favorite toppings.
5. Put your bagel halves on the baking sheet.
6. Bake in the oven for about 5 to 8 minutes. You'll know they're done when the cheese is bubbly.
7. Let cool for a minute, and then enjoy your tiny pizzas!
Serves: 2 small toddlers or 1 hungry toddler.
You could also make these with the mini bagels and use them as appetizers at your child's next birthday party. *Just a thought*

Tamale Meatballs
This is one of the recipes I got from that Jiffy cookbook I requested from there website. Overall this recipe was a success, could be tweaked a little but over all very good. It tasted like a meatball, enchiladas, and tamale rapped up in a little ball.
*Tamale Meatballs*
(40-45 Meatballs)
~I got about 25 meatballs but I was making it for dinner not an appetizer~
1 pkg. "JIFFY" Corn Muffin Mix
2 eggs
1/2 cup milk
2 cans (10 oz.) enchilada sauce (red or green, whatever you like)
1/2 tsp. salt
2 Tbsp. diced onion
dash pepper
1-1/2 lbs. ground beef
1 tsp. garlic powder
2-1/2 cups shredded Monterey Jack cheese ( used shaped cheddar)

Preheat oven to 400º , grease 8" square pan.
Blend corn muffin mix, 1 egg and milk until well mixed. Pour into prepared pan. Bake 20 minutes. Remove from oven, cool and crumble. Reduce oven to 350º. Combine cornbread, 1 egg, 1/2 cup enchilada sauce, salt, diced onion, pepper, ground beef and garlic powder, mix well. Shape into 1" balls and place in 13"x9" baking pan. Bake uncovered 35 minutes . In a sauce pan, heat remaining enchilada sauce. Top cooked meatballs with sauce and sprinkle with cheese. Return to oven until cheese melts. ~I made it with rice and beans~
